Bake: Apple, Pecan and Gingerbread Loaf

I made this cake for a special occasion last week, when Evie and I were lucky enough to have Jo and Ruby over for a play date. I was inspired when reading this month’s Delicious Magazine. As you know, I am a fan of the gingerbread (and here) and I just love desserts and sweet treats with apples in them. Please meet the Apple, Pecan and Gingerbread Loaf

– The original recipe -

– My starting point -

– All chopped up -

– Dry ingredients to start with -

– Melting butter, sugar and golden syrup to then add to dry ingredients -

– Evie helping with the melted wet ingredients -

– All mixed together -

– Ready for the oven. I used a lamington tin as my loaf tins are packed away -

– Fresh out of the oven…yum! -

– Perfect with a yummy herbal tea -

This was another success. Jo said she liked it (good news) and Husband ate in within the 36 hours that it was baked – not a bad effort really!
